
Back on the road
The Snack Box, Stacey, and I are back in the RV! We love our little camper trailer and were very excited to get back to our life on the road, where we’ll spend most of May.
Johnson’s Itty Bitty Farm
Our first stop took us to Johnson’s Itty Bitty Farm in Boone, CO, where we met some of the most adorable farm animals we’ve ever seen. The highlight for me was obviously the mini cow, but they had mini horses, mini donkeys, puppies, baby goats, alpacas, pigs, and peacocks (including an albino peacock). They gave us free reign on the farm to pet and play with all the animals — I even got to milk a goat!
For those who don’t know, I’ve had a lifelong obsession with cows and a more recent obsession with mini cows. This was my first opportunity to meet a mini cow in person and Midnight did not disappoint, as we quickly became best friends. Also, I had no idea that baby goats were the most adorable animal in existence. I wish I got more photos, but I was too inundated with petting and playing with all the adorable animals to stop for pics.
COLD BEER
We continued south into New Mexico and, while the scenery along the drive has been absolutely stunning, there is very little around. As Stacey put it: “There are more cows than people and there aren’t that many cows.” We stopped off for the night at the only watering hole for what seemed like 100 miles: Colfax Tavern & Diner, who’s simple “Cold Beer” advertising was more than enough to drive in the local traffic. Unfortunately, with Cold Beer in one hand and New Mexico’s finest pizza in the other, I didn’t manage to get many good pics.
Roswell, NM
What would a New Mexico tour be without stopping off in Roswell?! We had to get to the bottom of the intergalactic mystery and swing through for a little alien education. We hit all the top spots: The International UFO Museum (and Research Center), Roswell UFO Spacewalk, and of course the UFO McDonalds. We also couldn’t resist going to the Miniatures and Curious Collections Museum — which was… eclectic.

PistachioLand
Continuing our journey southwest, we ventured to one of America’s most significant national monuments: the world’s largest pistachio (sculpture) at PistachioLand. We got a tour of the pistachio fields (orchard?), ate fresh pistachio ice cream, tried countless pistachio varieties, resisted purchasing pistachio tchotchkes, and even had pistachio wine!
Rio Grande Winery
On our next stop in New Mexico, we stayed at Rio Grande Winery, overlooking the most gorgeous New Mexico scenery. We were welcomed with a live Latin band, a delicious Mexican food truck, good wine, and perfect weather. The perfect way to celebrate Cinco de Mayo!
New Mexico Farm & Heritage Museum
The NM Farm & Heritage Museum in Las Cruces, NM highlighted 4,000 years of agriculture in New Mexico, the history of Billy The Kid, and had lots of cows. Stacey has been doing a 10/10 job including cows into this journey home and I’m all about it. There were a ton of different types of cattle, with explanations on their genetic lineage. Unfortunately, they were too far away to pet – but fear not – we’ve got more cows on the route!
What an amazing start to our journey back east. More adventure to come! Next stop: Texas.
